Ammas Spice Recipe

Vegetable Samosas

Vegetable Samosas


Ingredients: 

4 Potatoes; 1/2in diced

1 Diced Onion

4 Garlic Cloves minced

2 ½ Tbsps Amma’s Indian Curry Powder

¼ tsp Turmeric*

Salt and pepper to taste

Cayenne/paprika to taste*

1 pack of Spring roll/Wonton wrappers

4 Tbsps Flour + ~4 Tbsps water to make paste

Instructions:


Boil salted water on high heat, add 4 (½in diced) potatoes in and cook until soft. 


On medium high heat saute 1 diced onion and 4 garlic cloves minced until fragrant. Add 2 ½ Tbsps Amma’s Indian Curry Powder and ¼ ¼ tsp turmeric* (optional for color) and saute for about 3 minutes. Add in cooked potatoes and lightly mash, some bigger pieces should remain. Add ½ cup of frozen peas and taste filling for salt, pepper and cayenne/paprika for some extra spice.



Combine 4 Tbsps Flour + ~4 Tbsps water to create a paste that will help to hold the form of the samosa. 


Take one piece of the wonton dough and use paste on ½ a side of the dough. Fold and press edges to create the top of the triangular shape. Fill this pocket with dough. Line the rest of the edges with the paste and fold to cover the filling that is showing. Press and wrap the dough around the edges to make sure the oil won't touch the filling. Repeat.



Fill a frying pan with enough oil to cover over half the samosa when submerged. Heat oil on medium high to 365 degrees F or use a small test piece of dough, when the oil starts to bubble, it's ready to go. Take the test piece out (so it doesn't burn) and start frying the samosas. 


Flip and once golden brown on both sides, place on a paper towel to drain. Serve while warm.
