Ingredients:
2-3 Packs of frozen empanada dough (pastry version is my favorite type to use)
Beef Curry made with Amma’s Indian Curry Powder Ammas Spice Blends
Canola/Vegetable oil
Instructions:
Make Beef Curry using Amma’s Indian Curry Powder (link to detailed recipe: Ammas Spice Blends), let cool.
Follow defrosting instructions on the empanada dough. Add ~1 tbsp of beef curry on half of a disc and fold to seal. Fold and press edges or use a fork to further seal the edges.
Fill the skillet with enough oil to cover a little over half the empanada when submerged. Heat oil on medium high to 365 degrees F or use a small test piece of dough, when the oil starts to bubble, it's ready to go. Take the test piece out (so it doesn't burn) and start frying the empanadas
Flip and once golden brown on both sides, place on a paper towel to drain. Serve while warm.
