Ingredients:
4 Tbsp vegetable/canola oil
1/2 of a white onion sliced
2 cloves of minced garlic
4 Tbsp of Amma's Indian Curry Powder
~1.5 lbs of chicken (about 2 breast cut into bite size pieces)
8oz. can of tomato sauce
Salt and black pepper to taste
1/2 cup of stock or water*
Parsley for garnish*
Cayenne* to taste if you like a little more spice

Instructions:
In a large pot on medium heat add 4 tbsps of oil to the pan and sauté 1/2 sliced onion until translucent. Add 2 cloves of minced garlic, sauté for 1 min, making sure the garlic doesn’t burn. Add 4 tbsps of curry powder and toast for about 3 minutes. Heating the spices is a very important step so make sure you let them toast. The curry powder should be a tad darker when complete.
Turn heat to high and add ~1.5lbs of diced chicken and some salt and pepper, mix to make sure all the spices are coating the meat. Cook until all sides of the meat are cooked (approximately 5-8 mins), occasionally stirring, the inside should still be slightly raw. Don’t cover yet.
After all sides of the chicken are fully cooked then add 8oz can of tomato sauce and 1/2 cup of stock or water, mix and cover. Turn heat to medium and cook for 10 mins or until fully cooked, occasionally stirring. Adjust for salt and pepper and add cayenne if you’d like some more spice. Once the curry comes to a boil again it’s ready! Add parsley for garnish. Enjoy with paratha or naan.
