Beef Curry

Beef Curry

 

 

Ingredients: 

5 Tbsp vegetable/canola oil 

1/2 medium sized onion sliced 

3 Cloves of minced garlic 

4 Tbsp of Amma's Indian Curry Powder 

~1.5 lbs of Round cut beef (cut into bite sized pieces) 

8oz can of tomato sauce 

2 cups of stock or water (I use beef stock) 

Salt and black pepper to taste 

Parsley for garnish* 

Cayenne* to taste if you like a little more spice

Instructions:  

 

In a large pot on medium heat add 5 tbsps of oil to the pan and sauté 1/2 sliced onion until translucent. Add 3 cloves of minced garlic, sauté for 1 min, making sure the garlic doesn’t burn. Add 4 tbsps of curry powder and toast for about 3 minutes. Heating the spices is a very important step so make sure you let them toast! The curry powder should be a tad darker. 

 



Add in the ~1.5lbs of diced meat and some salt and pepper, mix to make sure all the spices are coating the meat. Turn heat to high and cook until all sides of the meat are cooked (approximately 5-8 mins), occasionally stirring, the inside should still be slightly raw. Don’t cover yet. 

 

After all sides of the meat are fully cooked add 8oz can of tomato sauce and 2 cups of stock/water, mix and cover. Turn heat to medium again and cook for 40mins-1hr or until tender, occasionally stirring. Add more water if you like a saucier curry. Taste for salt and pepper and add cayenne for some more spice. Add parsley for garnish. Enjoy with paratha or naan.
