Like every child who has a parent that cooks extraordinarily well, I think my mom makes the best South Indian curries in the world. As I have gotten older I understand
what it means when moms and grandmas say “it's cooked with love“. They take the time and care to do the extra things to make the meal that much better for their loved ones.
They replace the eggs because someone has an allergy, devain hundreds of shrimps, and make stock from scratch because of the smile it brings to those around them.
Moms deserve recognition for their amazing palates and the love they pour into the meals they provide for their family. I want to create spice blends with Ammas
(moms and grandmas) from across the world. I aspire to learn the secret spice blends then adapt the recipes and ingredients so the average cook can follow easy recipes
to produce an amazing meal at home.

The goal for each blend is to adapt the flavours and ingredients to what the average American household has. Of course, you’re not able to make an authentic Indian curry with just these spices. The spices aren’t freshly ground, its missing curry leaves and mustard seeds. But that doesn't mean it doesn't provide authentic flavours. And that’s the goal, to spread delicious authentic flavoured blends and recipes, adapted so the average cook can obtain the ingredients, follow a recipe, and cook ethnic meals with confidence.
The word Amma is used all around the world. All having similar pronunciations and meanings. The world is always curiously far more intertwined than expected. Amma is a Muslim name which means - A Generous, Forgiving Woman. In Malayalam, Telugu, Singhalese, Tamil, Persian, and Korean it means "mother". Amma is an abbes or spiritual mother; Webster's Revised Unabridged Dictionary. In Mandarin Chinese, amah means "grandmother”. Spices have been used around the world for various different reasons. Each amma creates their unique recipes throughout time to produce the amazing dishes we have today.
Each spice blend is a take on an Amma's recipe. Curating the spice blend with specific measurements to bring more flavour to every meal. You can use the spices to create a semi-authentic meal or be creative. Being born near New York City, I am exposed to many types of cultures and ethnicities. My continued curiosity for these cultures mainly derived from the different types of foods I would try with my friends. As I got older and started to cook for my own, I started attempting to cook different cuisines. But experimenting different types of cuisines always involves spending lots of money on spices and ingredients, often with mediocre results.
I created the first blend "Indian Curry Powder '' inspired by my mom's chicken curry. My mom was born in Kerala, a southern state in India where spices are abundant. I was really missing my mom's curry when I moved out on my own. And this blend was able to hold me over until I was able to get my mom's authentic version at home. This blend helps you to create something very similar to the curry she creates at home.
